But the best, most sophisticated, most grown up part of you knows that the best thing to do to ’em is to poach ’em, and then blanket ’em in a rich, creamy Hollandaise.

Because you know what today is, don’t you? Today is what the Googles call National Eggs Benedict Day.

But by the time this posts, the boys in back will be preparing your lunch.

Luckily, we consider every day to be Eggs Benedict Day, so we’ll be making ’em again tomorrow morning. And the morning after that.

And don’t forget! If you really want to treat yourself, we make a mean Crab Cake Bene, too, with two pan-fried crab cakes where the English muffins would be.

And yes, they are crazy good, and they belong in your belly.
