We at The Original are pleased to welcome to our family Ryan Bleibtrey, our new Executive Chef.
Bleibtrey (pronounced Blīb’tree, with a long”i“) comes to us from Urban Farmer, where, since 2008, he was the Chef de Cuisine.
“I’m excited about the concept,” he says of of The Original’s menu, “because there’s so much you can do with it.” It appeals, he says, to our memories of good homemade food made for us by our parents and grandparents, It also, he add, grants him the freedom to incorporate modern cooking techniques into old recipes.
An East Coaster whose lived in both Saudi Arabia and Japan —his father served in the Army Corps of Engineers—Bleibtrey is a graduate of Johnson and Wales University where he majored in Culinary Arts. He’s cooked in kitchens in upstate New York, Charleston, South Carolina, and Las Vegas before he settled in Portland to open Toro Bravo in 2006.
When he’s not in the kitchen, Ryan can be found outdoors either gardening, fishing, running, hiking, biking, motorcycling—he recently restored by hand an old Kawasaki KZ650—and spending time with his toddler son.
